Is $2,100 to install rockwool insulation batts in a garage a fair price?

I have a garage with 2x6 framed walls that are unfinished on the inside. I'm considering installing rockwool insulation batts and then drywall. I received a quote for labor only to install the insulation, which seems high for my high cost of living area, so I'm considering doing it myself. I'm generally handy but haven't installed insulation before. The walls have regular stud bays with some smaller areas around doors/windows, and existing electrical wiring. I'm also thinking about doing the drywall myself, though I've never done that. I'm trying to understand how difficult it is to install rockwool insulation compared to fiberglass, and what precautions are needed.
