Is $8,500 to remove and reinstall kitchen cabinets and quartz countertop for wall insulation a fair price?

My house is from 1926 with brick exterior walls. When we purchased the home a year ago, the kitchen was fully renovated about three or four years ago. However, after two winters, we've realized the walls were not insulated during the renovation. The kitchen faucet pipes are currently up against an exterior wall and are under constant freezing watch due to below zero temperatures in Yonkers, New York. We need to insulate the exterior kitchen wall, especially the east-facing wall that experiences major wind and seems to be leaking cold air into the house. I am trying to avoid ripping out all the cabinets and countertop, which could potentially crack, and am considering having an insulation company cut through the back of the cabinets to fill with spray foam instead.
