Is $600 to add another coat and bring drywall to Level 4 without re-taping a fair price?

I am concerned about being upsold for re-taping the drywall. I'm wondering what might happen if the drywall isn't retaped. I'm only going to be in the house for a maximum of 5 years, so I'm not extremely concerned about long-term durability but care a lot about looks. I'm also wondering if mesh tape is bad and if it's likely to start cracking in the near future. I'd like to know what "floating" means and if there's a way for me to determine if it's floating.
