Is $1,982 to refinish 608 sqft of red oak wood floors a fair price?

I have been getting estimates for floor refinishing and am confused by the conflicting advice regarding the number of poly coats (2 or 3 water-based, or 2 poly + 1 Bona high-traffic) and drying times (next day vs. 3-5 days for furniture). My 608 sqft red oak select floors were installed 20 years ago and are in good condition. I want to remove the yellowing from my floor, which was caused by the old oil-based poly.
