Is $850 to replace entire countertop a fair price?

Our undermount ceramic sink broke when our toddler dropped a heavy item in it. I tried to fix it myself, but it started cracking more. I bought a $70 replacement undermount sink, but someone suggested replacing the entire countertop instead and quoted $850. I'm looking for advice on the best approach.
